Vouette et Sorbee有著悠久的葡萄種植歷史，在Cote des Bar的Buxieres-sur-Arce擁有5公頃葡萄園，距Chablis東北60公里。這裡Vouette、Sorbee和Biaunes等地塊的地質，和Chablis特級園、一級園很像。起初，酒莊把葡萄賣給其他香檳酒莊，直到2001年，著名釀酒師Anselme Selosse（來自Jacques Selosse酒莊）說服Bertrand Gautherot，酒莊才開始自產香檳。2004年，首款香檳問世，由於產量少，市場上很難見到。
Bertrand Gautherot既是酒莊主人，也是釀酒師，工作一絲不苟。葡萄園用生物動力法栽培，手工採摘葡萄，天然酵母發酵，裝瓶浸渣陳年20個月，每款香檳都標明除渣日和基酒年份。這樣釀出的香檳，充分展現了不同風土在各年份的特色。
Vinous酒評家Antonio Galloni稱讚其為香檳區最令人振奮的酒款之一。
