Tasting Notes
Pale gold with a nose of white peach, floral notes, toasted almond, and a fine woody touch. On the palate, crisp and flinty with vibrant acidity, a creamy texture, and a long mineral finish. As the estate says: “Potent and delicate as they mature.” Exceptional keeping potential — stunning now, extraordinary in 10+ years.

About the Producer
Château Simone is the undisputed icon of the Palette AOC — one of France’s smallest and most singular appellations, nestled in the hills east of Aix-en-Provence. Owned by the Rougier family for over 200 years, the estate farms ancient vines on limestone and clay soils shaded by pine forests, producing whites, rosés, and reds of extraordinary complexity and longevity. A true Provencal legend with a cult following among collectors worldwide.
Food Pairing
This rich, complex Provence white is a dream with bold Mediterranean and Asian dishes. Try it with steamed lobster with butter, pan-seared sea bass with fennel, Cantonese steamed grouper with ginger, or a rich bouillabaisse. The beeswax and almond notes make it stunning with aged hard cheeses and truffle dishes. Serve at 12–14°C.
