Tasting Notes
Named after the ancient Oligocene limestone soils of the Côte de Beaune, this is Bourgogne Blanc at its most distinguished. The 2020 Javillier Oligocène is full and vigorous on the palate with bright citrus, fine floral notes, and a vivid mineral edge. Buttery and complex with a persistent, beautifully balanced finish. Elegant, precise, and seriously over-delivering for the appellation.

Food Pairing
This elegant, mineral Chardonnay is a dream with delicate, flavourful dishes. Try it with pan-seared scallops with lemon butter, Cantonese steamed sea bass with ginger, grilled white asparagus with hollandaise, or a classic Burgundian goat’s cheese tart. Serve well chilled at 11–13°C.
