No osmanthus flowers were harmed in the making of this wine — yet the Lingering Clouds 停雲蘭桂齊芳 bursts with osmanthus and orchid aromas. The magic? Chardonnay grown in Chablis-like terroir, double-fermented with Oolong tea. The result is bone dry (under 4g/L sugar), IPA-textured, with fine bubbles, creamy white peach, lemon, and citrus — finished with a gorgeous tea tannin backbone. Rated 93 points by James Suckling.
