Domaine Eric Bordelet, the former head sommelier at Paris's Michelin three-star restaurant Arpège, took over his family's estate in Charchigné (on the border of Normandy and the Loire Valley, France) in 1992 to craft world-class, terroir-driven ciders and perries.
