Tasting Notes
Chardonnay co-fermented with Dark Tea (黑茶) — deep gold with fine bubbles. Earthy, complex aromas of dried fruit, forest floor, and aged wood, layered with citrus and stone fruit from the Chardonnay. On the palate, full-bodied for a Pét-Nat, with a rich texture, lively acidity, and a long, smoky tea finish. Bold, brooding, and utterly original.

Food Pairing
This rich, earthy sparkler loves bold, umami-driven dishes. Try it with braised pork belly, roasted duck, or aged hard cheese. The dark tea tannins make it a surprisingly great match for grilled meats and smoky barbecue. Serve slightly chilled.
