Answer: Cold maceration (aka. Macération pré-fermentaire à froid (MPF) in French)!
By macerating red grapes at a lower temperature before fermentation, the aromas, pigments and tannins can slowly diffuse into the juice. MPF process extracts the best flavour while preserving the delicate character of red wines....similar to the idea of making "cold brew coffee".
