I want share with you, the authenticity of Sauvignon Blanc (aka. the wild white) and how different the style can become if it is planted & vinified in France.
Domaine Pascal Cotat is probably one of the most original interpretation. Taking organic & biodynamic approach, pushing grape maturity to the extreme on the "terres blanches" (Mix of silex & fossil soil). The unique techniques result in an uncommon, yet traditional style of Sancerre.
Leading notes of peach, apple and layers of minerality at the end palate. I particularly enjoy the highlights of minerality from Les Monts Damnes.
Probably one of the most singular Sauvignon Blanc white wines existed. A rare example of extraordinary ageing potential.
