Chateauneuf-du-Pape (aka CDP) is the first official AOC (French: Appellation d'Origine Contrôlée) wine region in France as well as the home to many highly sought after red wines.
While there are 13 official grape varieties allowed in the blend, GSM = Grenache + Syrah + Mourvèdre is probably the most popular amongst all. This style is known for its boldness and intensity of flavours.I want to introduce you to a different and prestige version - white Chateauneuf-du-pape certified-organic version. This method makes the wines approachable faster. Great with 1 hour of carafage before service, or even better with 3-5 years of bottle ageing.
Perfect if you want to pick an aromatically intense red wine with layers of red plum, prune and cherry aromras and elegantly textured. This wine reminds me of the traditional duckleg "confit de canard" dish every time when I sip a white CDP.
