The charming secret of Cuveé "Le Rang du Merle" is the choice of very old-vine of 70-90 years old. The 3-week-long Beaujolais signature semi-carbonatic maceration elevated its aromatic profile and concentration to the next level. In addition, 9-month maturation in the oak barrel enabled the wine to take on a hint of sweet spices or smoky character at the end palate.
I would carafe this wine for 1 hour to let the structure relaxes because of the concentration. Serve it slightly chilled as how the locals would do~
