Domaine Confuron Cotetidot has a long-standing history of winemaking in Burgundy and is known by wine drinkers as a solid address for consistent, powerful styles of wines. It is run by the two brothers, Yves and Jean-Pierre; the first works in the vineyard, and the latter is in charge of the winemaking.

They own 11 hectares of vineyards spread throughout the Cote de Nuits. Strong focus on massal selection, organic viticulture without certification as they don't believe in the dogmatic approach certification bodies require consistent ploughing, short pruning, low yields and an incredible wealth of old vines.

The brothers like to harvest pretty late as they believe one can only get the terroir effect when the fruits are at their full potential. In the winery, whole bunch fermentation occurs, and the wines spend up to two years in barrels.

'Bourgogne Passetoutgrains' is an appellation that the government created in the early 1930s allowing the judicious blend of the two red varieties grown in Burgundy: Pinot Noir and Gamay. It is a style that can be drunk early in its youth, yet can also be cellared for a few years.

Domaine confuron-cotetidot (寇特提多酒莊)位於Vosne-Romanée 村,現由第五代莊主 Jack 與長子 Jean-Pierre 兩人經營,次子Yves 則是在 Pommard 村的知名酒莊 Domaine de Courcel 與酒商 Maison Chanson 擔任釀酒師。

 

酒莊種植葡萄的歷史非常悠久,最早可追溯到十七世紀路易十四時期。家族在葡萄樹的選育與嫁接技術上十分著名,黑皮諾品種中的Pinot Confuron 就是以此家族名稱命名。1964年,家族分家,Jacky Confuron 與妻子Bernadette Cotetidot 成立了兩人聯名的Confuron-Cotetidot酒莊。

 

Confuron-Cotetidot酒莊共有11公頃的葡萄園,其中包含4個特級葡萄園,平均樹齡皆在70歲以上。酒莊堅持低產率認為優良的品質沒有捷徑,皆歸功於嚴謹的工作與細節的專注嚴格控制芽眼的數量,一株只留5-6個芽眼,一公頃的產量控制在3000公升左右。為了要確保葡萄有著完美的成熟度,酒莊通常都是村裡最晚採收的,雖然每年都是賭注,但為了好的品質,再大的風險酒莊都願意承受。

 

葡萄採收後,篤信傳統釀造法的Jacky Confuron以曾曾祖父留下,已有 150年歷史的榨汁機來榨汁,並且特立獨行地讓葡萄在酒精發酵前先低溫浸泡(MPF),在攝氏10度以下的低溫狀態讓果汁、果皮與梗浸泡時間延長,進而萃取出更多的色澤、單寧與果香,形成了Confuron-Cotetidot酒莊口感與香氣上的特殊印記。

 

酒莊的葡萄皆經過兩次的篩選,留下皆為健康的果實,所以要做的只有喚醒葡萄皮上的原生酵母,再以少量的新桶培養,免去過多的煙燻味去影響到黑皮諾原有的細緻果香,木桶培養為期18~22個月之後無過濾、不澄清直接裝瓶。

Delivery between 9 am and 8 pm (Monday to Saturday, excluding public holidays) except for severe weather conditions (including the hoist of typhoon and rainstorm signals) and force majeure situation.

Order delivery can be made within 3 working days* from the transaction the soonest.  Same day delivery is available for selected area - Tsuen Wan.
